Buffalo Mozzarella

That’s Amore Cheese source Water buffalo milk from Koondrook, in Northern Victoria and Northern Queensland, to make their award winning fresh Buffalo mozzarella. (Awarded a Gold Medal at both the Melbourne and Sydney 2010 Australian Specialist Cheesemakers Association Melbourne Cheese Show and a bronze medal at the fine food awards at The Royal Melbourne Show.)
It has a milky juiciness and the texture is still quite firm. For those who like the inside softer we suggest leaving the mozzarella in the brine for a further couple of days.
Although the milk has a higher fat content, giving it a rich creamy texture, it contains a higher percentage of both calcium and protein than cow’s milk, and also contains a lower percentage of cholesterol. Buffalo milk also contains a high concentration of vitamin A. Available everyday in balls approximately 125g each. We can also make larger size balls, 500g -1kg, on order.
Hard Buffalo Cheese
Our first hard cheese, aged only 6 weeks it has a beautiful crumbly texture and strong finishing bite. Great for cheese boards or grating over pasta as an alternative to parmigiano.
